Dough1/2 C
Ground Blanched Almond1/2 C Rolled Oats (Or GF flour)
1 TBSP
Coconut Flour1/2 tsp Baking Powder
1/4 tsp Baking Soda
1 tsp Vanilla Essence/Extract
1/3 C Mashed Overripe Banana
Filling1/3 C Dates
2 tsp
Almond Butter3/4 tsp Cinnamon
Pinch of Salt
Sultanas/Walnuts
Icing1 TBSP Coconut Milk Powder
1 1/2 tsp Coconut Oil
Pinch or 2 of
Keto SweetenerChopped Walnuts or Sultanas (optional)
Method
1. Preheat oven to 180 C and mash banana and vanilla together. Add dry ingredients and stir/fold until a soft, cohesive dough forms
2. Blend filling ingredients until a smooth paste forms
3. Lay out a large piece of baking paper and pat dough down into a large, rectangular shape. Gently spread date paste overtop, sprinkling with chopped walnuts/sultanas as desired. Use baking paper to carefully roll dough up, cut in half.
4. Bake for approx 15 mins until lightly golden/browned. Drizzle with icing once cooled.
