This recipe was passed down to me from my Gran and I have adapted it over the years to include protein as I’ve looked for more ways to add more protein to my diet. It’s always a hit and I sometimes double the recipe to make two loaves (and then freeze one). I love making this when I’ve got bananas that are just starting to turn.
Prep time: 15 mins | Bake time: 45-50 mins
Ingredients:
Directions:
Preheat oven to to 180degC
In a large bowl mash up bananas with a fork. Mix in melted butter.
Mix in sugar, egg, vanilla and cinnamon powder.
Sprinkle baking soda and salt over mixture and stir
Add tablespoon of honey and chopped walnuts.
Finally add in flour and Lean Bean Protein Powder. Fold mixture gently until well-mixed.
Pour mixture into a well buttered loaf tin (line with baking paper if you like)
Bake for 45-50 mins.
