Best-Ever Dairy-Free Protein Banana Bread

This recipe was passed down to me from my Gran and I have adapted it over the years to include protein as I’ve looked for more ways to add more protein to my diet. It’s always a hit and I sometimes double the recipe to make two loaves (and then freeze one). I love making this when I’ve got bananas that are just starting to turn.

Prep time: 15 mins | Bake time: 45-50 mins

Ingredients:

  • 4 super ripe bananas
  • ⅓ cup melted butter (you can use Olivani and make this a dairy-free recipe)
  • ½ cup brown sugar
  • 1 egg beaten
  • 1 tsp vanilla extract
  • 1 tsp cinnamon powder
  • 1 tsp baking soda
  • Pinch salt
  • 1 Tbs honey
  • ⅓  cup chopped walnuts
  • 1 and ⅓ cups all-purpose flour
  • 1 scoop of Nothing Naughty Lean Bean Protein Powder - Banoffee flavour (you can use whey powder too) - 10g protein 

Directions:

  1. Preheat oven to to 180degC

  2. In a large bowl mash up bananas with a fork. Mix in melted butter.

  3. Mix in sugar, egg, vanilla and cinnamon powder.

  4. Sprinkle baking soda and salt over mixture and stir

  5. Add tablespoon of honey and chopped walnuts.

  6. Finally add in flour and Lean Bean Protein Powder. Fold mixture gently until well-mixed.

  7. Pour mixture into a well buttered loaf tin (line with baking paper if you like)

  8. Bake for 45-50 mins.
