Blueberry Collagen Muffins

Gluten free | High protein | Refined sugar free

Each muffin packs 5g of collagen, over 10g of protein, and 10g of fibre!

Ingredients:

2 eggs

1/4 cup melted butter or olive oil

1/2 cup Greek yoghurt

1 tsp vanilla extract

1/3 cup Nothing Naughty Natural Maple Fibre Syrup

Optional: lemon or lime zest

3/4 cup almond meal

1/4 cup gluten free flour (or regular if not intolerant/coeliac

1 tsp baking powder

Pinch of salt

6 scoops (30g) Nothing Naughty Natural Pure Collagen Powder

3/4 cup fresh or frozen blueberries

Directions:

Preheat your oven to 180°C and line a muffin tin.

In a large bowl, whisk the following ingredients together until smooth: eggs, melted butter/olive oil, Greek yoghurt, vanilla extract, maple syrup/honey, and optional lemon/lime zest.

Add the almond meal, flour, baking powder, a pinch of salt, and collagen powder. Stir until just combined – don’t overmix!

Gently fold the blueberries into the batter.

Spoon the batter into the muffin tin, filling each cup about ¾ full.

Bake for about 30 minutes, or until the tops are golden and a toothpick inserted into the centre comes out clean (every oven is different so keep an eye on it!).

Allow to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
